The black radishes you see at the store are a variety called black Spanish. These radishes are usually coconut-white on the inside.
The black pigment in their skin is due to the presence of anthocyanins, which are water-soluble flavonoid pigments that give fruits and vegetables their red, blue, or purple colors. Anthocyanins are thought to have beneficial health effects because they’re antioxidants, meaning they help protect cells from damage caused by free radicals.
