There is a difference between hot and spicy. Hot refers to the temperature of the sauce, while spicy refers to how much heat the sauce produces in your mouth.

Generally, a hot sauce is made with peppers that are high in capsaicin, which is what makes them spicy. The more capsaicin in a pepper, the hotter it will be. So, a hot sauce made with very spicy peppers will be hotter than one made with mild peppers.
