• 1 lb black radishes, tops trimmed
• 1 small onion, diced
• 3 cups vegetable broth
• 1 cup water
• 1/4 cup white vinegar
• 1/2 tsp sugar
• salt and black pepper to taste


1. Peel and dice the black radishes.
2. In a large pot, combine the black radishes, onion, vegetable broth, water, vinegar, sugar, salt and black pepper.
3. Bring to a boil over high heat, then reduce the heat to low and simmer for 30 minutes.
4. Puree the soup with an immersion blender or in a regular blender.
5. Serve hot or cold, garnished with diced radishes or chopped fresh herbs if desired.

• 1 black radish, thinly sliced
• 1/4 cup diced red onion
• 1/4 cup diced celery

1. In a large bowl, combine black radish, red onion, celery, green apple, white wine vinegar, olive oil, salt and pepper.
2. Toss to coat.
3. Refrigerate for at least 30 minutes before serving.
4. Garnish with fresh parsley before serving.

• 1 black radish, peeled and thinly sliced
• 1 tablespoon butter
• 1 tablespoon flour
• 1 cup milk
• 1 cup Gruyère cheese, shredded
• Salt and pepper to taste

If you can’t have Gruyère cheese where you live, then try using Emmental or Comté instead, milder cheddar will also work.


1. Preheat oven to 375 degrees.
2. In a small saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Slowly whisk in milk until mixture is smooth.
3. Remove from heat and stir in Gruyère cheese until melted. Season with salt and pepper.
4. In a small gratin dish, layer sliced black radish and cheese sauce. Repeat until dish is full.
5. Bake for 15-20 minutes, or until gratin is golden brown and bubbly. Serve hot.

• 1 large apple, julienned
• 1/4 cup finely chopped red onion
• 1/4 cup white wine vinegar
• 1 tablespoon honey
• 1 tablespoon Dijon mustard
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 cup olive oil
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped fresh dill


1. In a large bowl, combine the black radish, apple, red onion, white wine vinegar, honey, Dijon mustard, salt, and black pepper.
2. Pour in the olive oil and mix well.
3. Stir in the parsley and dill.
4. Serve immediately or refrigerate for later.

• 1 black radish, peeled and grated
• 1 shallot, finely chopped
• 1 clove garlic, finely chopped
• 1 cup Arborio rice
• 3 cups chicken or vegetable stock
• 1/2 cup white wine

• 2 tablespoons butter
• Salt and pepper


1. In a large saucepan, sauté the shallot and garlic in the butter until softened. Add the black radish and cook for 2 minutes longer. Stir in the rice and cook for 1 minute until coated with the butter. Add the white wine and cook until absorbed.
2. Start adding the chicken stock, 1/2 cup at a time, stirring frequently. Cook until the rice is tender and creamy. Stir in the Parmesan cheese and salt and pepper to taste. Serve immediately.
