• 1 lb black radishes, tops trimmed
• 1 small onion, diced
• 3 cups vegetable broth
• 1 cup water
• 1/4 cup white vinegar
• 1/2 tsp sugar
• salt and black pepper to taste

Instructions:

1. Peel and dice the black radishes.
2. In a large pot, combine the black radishes, onion, vegetable broth, water, vinegar, sugar, salt and black pepper.
3. Bring to a boil over high heat, then reduce the heat to low and simmer for 30 minutes.
4. Puree the soup with an immersion blender or in a regular blender.
5. Serve hot or cold, garnished with diced radishes or chopped fresh herbs if desired.

• 1 black radish, thinly sliced

• 1/4 teaspoon black pepper
• 1/4 cup olive oil
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped fresh dill

Instructions:

1. In a large bowl, combine the black radish, apple, red onion, white wine vinegar, honey, Dijon mustard, salt, and black pepper.
2. Pour in the olive oil and mix well.
3. Stir in the parsley and dill.
4. Serve immediately or refrigerate for later.

• 1 black radish, peeled and grated
